Outside it’s raining, the fridge is full of mushrooms, but there’s nothing sweet at home.

Let’s fix that with a wild treat: Otidea Onotica candies.

You will need:
200 g of mushrooms
170 g of sugar
100 g of water

Combine the water and sugar in a pot and bring to a gentle boil to make a light syrup.

Add the mushrooms and cook slowly until almost all the liquid has evaporated.

When the mixture becomes thick and slightly caramelized, pour it onto a sheet of baking paper.

Spread the mushrooms evenly, cover with another sheet of paper, and press down with something heavy or with a rolling pin.

Leave it to rest for three to four hours, until completely cool and firm.

Once it has set, remove the paper and store the candies in a jar.

Enjoy your wild sweet snack.
