After we gathered some of the stunning luomu pumpkins from our field, the best chefs from all over the world came up with different amazing recepies to satisfy the villagers of Kurjentila. As I hope to see my comrades posts of the delicious things they have cooked, today I will share the recipe I have utilized during one of the lunches.
The goal for me was clear, to create a dessert for gluten free people of our village and make it as simple as possible!
The recipe for the pudding contains:
80g of brown sugar
24g of maizena
354 ml of homemade oatmilk
300g homemade pumpkin pure
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon ground ginger
1 teaspoon vanilla extract
To make our pumpkin pure you would need to:
– Heat your oven to 220 Celsius.
– Cut your pumpkin in half.
– Scoop out the insights (and save it for a tasty roasted side dish).
– Slightly salt both sides from the insight.
– Put it on a layered tray skin facing up.
– Bake for 1 hour.
– Take out, let it cool a bit and blend it until smooth
To make 700ml of homemade oatmilk you would need:
40g of oats
700ml of water
a pinch of salt
2-3 dates (or any sweetener that you prefer)
Simply combine oats with water and let them soak for 30 minutes. Add salt and dates and blend everything together for 3 minutes. Strain the mixture and enjoy your oatmilk, that will last for up to 3 days in the fridge.
To prepare the pudding do the following:
– Combine brown sugar and cornstarch to a medium saucepan. Whisk until combined.
– Slowly whisk in milk until combined with dry mixture. Remember to scrape around the corners of the pot!
– Add pumpkin puree and whisk again until combined.
– Place pot on medium-high heat and continuously whisk until mixture has thickened enough to coat a spoon. This step may take from 7 to 20 minutes depending on the heat of your stove.
– Remove pot from the heat and whisk in spices and vanilla.
– Pour pudding into a glass bowl and set aside until it cools down a bit.
– Place plastic wrap on surface of pudding.
– Refrigerate pudding for at least 2 hours so it can set.

This was relatively easy to make and the results satisfied our villagers!
